Mini Fruit Pizzas

We’ve got a fun holiday weekend in store for us.  It’s The Phoenix and I’s 5-year anniversary and our baby’s first birthday next week so we’re gonna be celebrating ’til the cows come home.  Or about 7:00pm, whichever comes first.

I thought I’d share a sweet dessert that would be perfect to serve at a barbeque this weekend, because we all know everyone’s going to one, right?  It’s the patriotic thing to do.

Right?

You can also make one big fruit pizza by rolling out the sugar cookie dough into one big circle, just keep an eye on it because I’m not sure what the baking time would be.  It’s done when it’s a light golden brown.  You’ll know it.

Okay, I’m off to bake about a hundred cakes this week.  Or three, but it might seem like a hundred.  Enjoy the long weekend!

Mini Fruit Pizzas

Details
  • Prep Time: 20 minutes.
  • Cook Time: 10 minutes.
  • Ready in 30 Minutes.
  • Makes: 12 Servings
Ingredients
  • 1 package refrigerated sugar cookie dough
  • 8 oz fat-free cream cheese, softened
  • 1 jar marshmallow creme
  • fresh fruit of your choice (an assortment of berries work well)
Directions
  • Preheat oven according to sugar cookie package directions.
  • Roll out dough to 1/4-inch thickness and cut into rounds using a cookie cutter. Reroll and cut scraps as necessary. Bake cookies according to package directions. Let cool completely.
  • Meanwhile, beat cream cheese and marshmallow creme together until well combined. Refrigerate until ready to assemble pizzas.
  • To assemble fruit pizzas, spread cream cheese mixture on top of sugar cookies, leaving a 1/2-inch rim along the outside of the cookies. Decorate with berries as you\'d like. Serve immediately and refrigerate any leftovers.
