Finally.  I tried a new recipe that was worth sharing with you.  It feels like it’s been ages.  My apologies to you and my poor family.

Popovers are a breeze to make and would complement so many meals very well.  (We had them with Asian Wonton Salad.  Yum.  We love that salad and probably have it almost every week.)  You simply mix the ingredients up in a blender, pour in your muffin tin and bake.  (For the popovers, not the salad, you silly gooses.)  And the presentation is cool because the popovers, well, rise high and pop over the tins.

The Phoenix and I thought these tasted a little like a German puffed pancake, but more in dinner roll form.  Pretty good for the simplicity of ingredients and prep.  Give ’em a try and let me know what you think.

Popovers

Details
  • Prep Time: 10 minutes.
  • Cook Time: 40 minutes.
  • Ready in 50 Minutes.
  • Makes: 8 Servings
Ingredients
  • 3 tablespoons melted butter, divided
  • 2 eggs
  • 1 cup milk, warmed for 30 seconds in the microwave (should be lukewarm to warm)
  • 1 cup all-purpose flour
  • 1 teaspoon kosher salt
Directions
  • Preheat oven to 400 degrees.
  • Using a pastry brush, coat 8 muffin cups with 1 tablespoon of the melted butter and put the tin in the oven for 5 minutes.
  • Meanwhile, mix the eggs in a blender until light yellow. Add the warmed milk and blend. Add the flour, salt and remaining melted butter, and blend until smooth.
  • Pour the batter into the warmed muffin tin and return it to the oven to bake until golden, about 35 minutes. Remove from the oven and serve warm.
