Chicken Crescent Bundles

Posted by Vanessa in Cooking, February 16, 2010

For someone who doesn’t like cream cheese, The Phoenix sure requests this for dinner often.  (And, yes, he knows it’s in there, I only tried to keep it a secret the first time I made them.)  It’s an easy dinner to throw together, and we all really like it, even our 2-year old.

Honestly, I never measure when I make this, but I wrote amounts down in the recipe to give you a starting point.  This one’s easy to eyeball and season to your liking.  Just make sure the cream cheese and milk mixture isn’t runny so it’ll stay in the crescent rolls while baking.  I was thinking too that you could add scallions and that would give it another depth of flavor that would be nice.  I’m going to have to give that a whirl next time.

Did you know you can grow scallions in your kitchen in a glass of water?  I didn’t until recently, but it’s awesome.  I haven’t bought them since I learned about it and have an overabundant supply right now.  Just stick your green onions, root side down, in a tall glass of water.  They’ll grow like weeds.  I just snip off whatever I need when I’m cooking.  And they keep growing and growing and growing.

I usually serve these with mashed potatoes and green beans, and it all goes well together for an easy weeknight dinner.

Details
  • Prep Time: 15 minutes.
  • Cook Time: 30 minutes.
  • Ready in 45 Minutes.
  • Makes: 4 Servings
Ingredients
  • 1 chicken breast, cooked and shredded
  • 4 oz cream cheese, softened
  • 1/4 cup milk
  • 1 tablespoon minced onion
  • garlic powder
  • kosher salt
  • black pepper
  • 1 package refrigerated crescent rolls
  • 1 tablespoon melted butter
  • 1/4 cup bread crumbs
  • 1/4 cup finely chopped pecans
Directions
  • Preheat oven to 350 degrees.
  • In a medium bowl, combine cream cheese and milk using an electric mixer until smooth. Add in minced onion, and garlic powder, salt and pepper to taste. Stir in chicken.
  • Now, with your opened tube of crescent rolls, separate it in half at the perforated seam in the middle. Then roll each section out and separate in half again so you have 4 rectangles.
  • Starting with one rectangle, pinch seam together at the diagonal so it is one piece of dough that will not break apart. Place 1/4 of the chicken mixture in the middle of the rectangle and fold up all sides, pinching together so you have a ball. Repeat with remaining 3 rectangles.
  • Mix together bread crumbs and pecans in a shallow bowl.
  • Brush crescent balls with melted butter and roll in bread crumb and pecan mixture.
  • Place on a baking sheet or stone and bake for 25-30 minutes, or until golden brown.

making these as I speak. I saw that this on facebook and saw that I had all the ingredients. I figured why not try for lunch. I used can chicken for the ease of it and made my spices a bit more spicy but other than that. It should be all the same. I will let you know how mine turn out. Yours look beautiful and yummy!

Cody and I make this sometimes, and sometimes we put cooked ground beef, and little chunks of Velveeta in the cresent bundles and wrap them up like inside out cheeseburgers! Delicious!

Yum! We do something similar too, except with taco spices so it has more of a Mexican feel than a cheeseburger. Crescent rolls make everything so good.
