No-Bake Fresh Strawberry Pie
This pie never lasts long. I’ve served this a few times when we’ve had guests and I’m always left with an empty pie plate at the end of the evening. Not such a bad thing, except that I’m always wanting another piece and it. just. isn’t. there.
This strawberry pie is ideal for summer because you don’t need to turn the oven on, it comes together in about 15 minutes and is light and delicious. What more do you need?
No-Bake Fresh Strawberry Pie

- Ingredients
- 1 ready made chocolate pie crust (look by the ready made graham cracker pie crusts at the grocery store, usually there is a chocolate version available too. choose that one!)
- 6 ounces 1/3-less fat cream cheese, softened
- 1/3 cup powdered sugar
- 3/4 teaspoon vanilla extract
- 2 cups frozen whipped topping, thawed
- 2 tablespoons strawberry jam
- 1 teaspoon fresh lemon juice
- 1 pound small strawberries, hulled and cut in half
- Directions
- Place cream cheese, sugar and vanilla in a medium bowl; beat with a mixer at medium speed until smooth. Fold in whipped topping. Carefully spread over bottom of pie crust.
- Place jam in a large microwave-safe bowl and heat for 8-10 seconds, until softened. Whisk in lemon juice until smooth. Add berry halves; toss to combine. Arrange berry halves over pie. Chill for 30 minutes before serving.
