Zucchini Bread
I already have one zucchini bread recipe on this site, and really have always enjoyed it, but seem to always be left with quite a few muffins that never get eaten…so this time when I brought home some gigantic zucchini from a local farmer’s market, I decided to try out a new recipe and see what happened.
Oh. My. Word. This bread is ridiculous. We devoured it. I baked one loaf and 6 muffins out of the batter and it was all gone well within 24 hours. And it wasn’t just me. The kids and The Phoenix couldn’t get enough either. This recipe makes for a more tender, lighter crumb than the Fresh Zucchini Muffins I posted last summer and apparently a more addicting flavor. And, this bread doesn’t need to be buttered. It’s perfect just the way it is, and I didn’t even know you could make zucchini bread that good.

Zucchini Bread

- Prep Time: 15 minutes.
- Cook Time: 60 minutes.
- Ready in 1 Hour, 15 Minutes.
- Makes: 2 Pieces
- Ingredients
- 3 eggs
- 2 cups sugar
- 1 cup canola oil
- 1 tablespoon vanilla
- 2 cups loosely packed grated zucchini (do not peel)
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 tablespoon cinnamon
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup chopped walnuts, optional
- Directions
- Preheat oven to 350 degrees.
- Using a stand mixer, in a large bowl, beat eggs. Add sugar, oil and vanilla. Beat mixture until thick and frothy.
- Stir in zucchini. Whisk together the remaining ingredients in a separate bowl, and then add mixture to the rest of the ingredients. Stir until combined.
- Pour mixture into two greased loaf pans. Bake for 1 hour or until a toothpick inserted in center of loaf comes out clean.
- Cool in pan for 10 minutes, then remove and place on rack until completely cooled.
- (To make muffins, fill greased muffin cups 2/3 full and bake at 350 degrees for 30 minutes.)
