Pasta Salad with Tomatoes and Parmesan
Here’s a simple (only 4 ingredients!) pasta salad to start the week. It’s one of my faves. I love making it on a Monday so I can snack on it and have it for lunch the rest of the week. It keeps well in the fridge for a few days, and I like it both cold and warmed up a bit too. Lately I’ve preferred it a little on the warm side, maybe 25 seconds or so in the microwave for one serving, but in the middle of summer, it’s a great cold pasta salad. Perfect for picnics and cookouts and the like. And if it were garden season here (it’s not…boo) there would be plenty of basil in there too. Yummity yum yum.
