Simple Broccoli & Cauliflower Salad

Not in the slightest am I a fan of cooked broccoli and cauliflower.  The smell pretty much makes me want to hurl.

On the contrary, when served raw with a little dressing to spice things up, I could eat this.  Maybe even often.

My grandma has been serving a variation of this salad for years and it’s so yummy.  My mom was making it the other day and mentioned it while we were on the phone so I decided to whip up a batch.  I mean, how often do I get a craving for vegetables…I couldn’t let it pass me by.

And with only five ingredients, I’m sure not pulling your leg about it being simple.  You could easily add more to it if you want, maybe raisins or other veggies, but I like it just like this.

And now for your recipe in pictures:

Cut or tear (or both) the broccoli and cauliflower into little bite-size pieces.

Pour in the sunflower seeds and stir to combine.

Then in a small bowl, mix ranch dressing (I used light to save on a few calories) and the sugar together.

On a little side note, when I was picking out a dressing at the grocery store, I compared the light and fat-free ranch dressings, and although the fat-free dressing had fewer calories, it’s first few ingredients included high fructose corn syrup.  The light dressing had buttermilk as one of the first ingredients which is much better for you than corn syrup so I went that way.

Now pour the dressing over the veggies and toss gently to coat.

And that’s it.  So simple, right?  I think it’s best to refrigerate it for a little while before you serve to give the flavors a chance to develop, but I had a bowl right after I was finished and it was yummy all the same.

Broccoli and Cauliflower Salad

  • Makes: 6 Servings
Ingredients
  • 1 head of cauliflower
  • 1 head of broccoli (are they even called heads?)
  • 1 cup sunflower seeds
  • 1/2 cup light ranch dressing
  • 2 tablespoons sugar
Directions
  • Cut or tear cauliflower and broccoli into small pieces and place in a medium mixing bowl. Add sunflower seeds and mix to combine.
  • In a small mixing bowl, stir ranch dressing and sugar until combined.
  • Pour dressing over vegetable mixture and toss gently until evenly coated.
  • Refrigerate for at least an hour before serving.
