Individual Peach Cobblers

With peach season coming quickly upon us, I thought I’d share one of my favorite desserts that feature these gems I swear taste like candy at their peak.  Perfect for something casual, or even super fancy since it’s served in little dishes and everyone gets their own.  C’mon, who doesn’t like that?

If you prefer, this can all be made in an 8 x 8 baking dish for a little ease, but not near as cute of a presentation.  (Baking temperature and time would not change.)  And it can also be made with frozen peach slices the rest of the year, which is quite wonderful since I truly love this dessert and would hate to only be able to make it 3 weeks out of every year.  But this summer, I’m using fresh every chance I get.  Yum.

Individual Peach Cobblers

Details
  • Prep Time: 10 minutes.
  • Cook Time: 35 minutes.
  • Ready in 45 Minutes.
  • Makes: 6 Servings
Ingredients
  • 3 ripe peaches, peeled and sliced, or equivalent in frozen peach slices (unsweetened)
  • 1 lemon, halved
  • 1 cup flour
  • 1/2 cup sugar
  • 1/2 cup light brown sugar
  • 1/2 cup old-fashioned oats
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon kosher salt
  • 1 stick butter
Directions
  • Preheat oven to 350 degrees.
  • Divide peach slices into 6 individual ramekins (6 ounce works well). Sprinkle lemon juice on top of peaches. Place ramekins in a 13 X 9 baking pan (not touching) for ease in baking.
  • In a medium bowl, mix flour, sugar, brown sugar, oats, cinnamon and salt using a fork or pastry cutter. Cut butter into small pieces and gradually add to flour mixture until evenly mixed.
  • Spoon flour mixture onto peaches in each ramekin and fill almost to the top.
  • Cover with foil and bake for 15 minutes. Remove foil and bake for an additional 20 to 30 minutes or until crisp and brown on top.
