Healthy Chicken Tacos

This week I’m featuring a couple easy, family-pleasing weeknight dinners that can be put together in 30 minutes or less.  Because sometimes what we need is something quick, that our kiddos will eat, and that we’ll even enjoy too.  Okay, maybe that’s what some of us need every night, but for this week, I’ve got two ideas for you.  Now both of these dinners require pre-cooked shredded chicken breast.  You could make double the chicken you need the night or even two before, or just pick up a rotisserie chicken at the grocery store.

I gave this recipe a try when I had tons of leftover shredded chicken breast and was craving some tacos but wanted my meat to have some additional flavor.  The whole fam approved and I even had it for leftovers the next day a time or two so that’s when I knew I should share it with you.  It’s not something you’ll find in any gourmet magazine, but for a great weeknight meal you can throw together in no time, it’s a keeper.  I served these tacos garnished with cheese, tomatoes, sour cream, salsa and a little cilantro and a side of Mexican rice.  Yum.  I’m pretty sure I could have tacos once a week and never get bored.

Healthy Chicken Tacos

Details
  • Prep Time: 10 minutes.
  • Cook Time: 15 minutes.
  • Ready in 25 Minutes.
  • Makes: 5 Servings
Ingredients
  • 1 tablespoon canola oil
  • 1/2 onion, chopped
  • 1 clove garlic, minced
  • 1 can tomato sauce (8 ounces)
  • 1/2 cup water
  • 1 tablespoon chili powder
  • 1 teaspoon seasoned salt
  • 1/4 teaspoon ground cumin
  • small pinch cayenne pepper
  • 3-1/2 cups cooked chicken, shredded
  • 15 taco shells or tortillas
Directions
  • Place canola oil in a large skillet over medium high heat. Add the onion and garlic; saute until onion starts to soften and become translucent, about 5 minutes.
  • Reduce heat to medium and add the tomato sauce, water, spices and chicken; simmer covered for 8-10 minutes, stirring occasionally.
  • Heat taco shells or tortillas according to package directions, fill with chicken and add all your favorite toppings.
