Oatmeal Pancakes

I can’t help it.  No matter how many great pancake recipes I have, I’ll try another one in a heartbeat.  And when I read an article on these Oatmeal Pancakes in Cooking Light, it reminded me of my absolute favorite pancakes at a place back in Arizona, and here we are.  Again.

Another healthy, yummy pancake recipe for me (and you, if you trust my judgment) to whip up in the morning when the little birds are starving, and Cheerios just aren’t gonna cut it.

And because my kitchen is almost completely in boxes as we speak, make some for me this weekend, won’t you?

Oatmeal Pancakes

  • Makes: 3 Servings
Ingredients
  • 1/4 cup all-purpose flour
  • 1 cup oats (the recipe calls for quick-cooking, but I used old-fashioned and they turned out great)
  • 1 tablespoon sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1 cup buttermilk
  • 2 tablespoons butter, melted
  • 1 egg
Directions
  • Combine the first 7 ingredients (through salt) in a medium bowl, stirring with a whisk.
  • Combine buttermilk, butter and egg in a small bowl. Add to the flour mixture, stirring just until moist.
  • Heat a nonstick skillet or griddle over medium heat. Coat pan with cooking spray. Spoon about 2-1/2 tablespoons batter per pancake onto pan. Turn pancakes over when tops are covered with bubbles; cook until bottoms are lightly browned. Serve immediately.
